Soulfood: Couscous and Ginger Tea à la Lissabon

Ingredients : A pack of couscous, an aubergine, a zucchini, an onion, some garlic, some salt and pepper, olive oil and basil, ginger and a lemonc
How to prepare:
1. Prepare the couscous as it says on the package (Usually you need one cup full of couscous and around two cups of hot water with some salt. You put everything in a pot and let it boil for 10-15 minutes until the couscous sucked up all the liquid.)
2. Cut the aubergine and the zucchini into small cubes
3. Cut the onion and the garlic into very small pieces
4. Put all the vegetables into a frying pan and roast them gently for 3-5 minutes
5. Then add some pepper, salt, any spices you like and some water.
6. Let the vegetables cook for 10-15 minutes.
7. Once the vegetables and the couscous are ready, mix everything. Decorate the couscous with some basil leaves and voilà- your dinner is ready :)
How to prepare the ginger tea:
Put two or three slices of ginger and a slice of lemon into a cup. Then pour hot water over it. If you like you can add some honey to make it taste a little sweeter ;)
