Summer Salad With Chickpeas And Sesame

Hey there, worldwide foodlovers :) Summer's almost over in Switzerland but recently we've been blessed with some wonderful sunny days and I was in the mood for light soulfood. So I created this summer salad which was inspired by an extremely delicious salad I ate in Lagos, Portugal while visiting an old childhood friend, who spent her summer in the Algarve. I hope you'll enjoy this salad as much as I did. You'll find the recipe below :)

Ingredients: one bell pepper (red or yellow), half of a cucumber, one avocado, a can of chickpeas (or fresh ones), around two spoons of sesame, lettuce, one big tomato, one mozzarella
Amount and time of preparation: you'll get one full salad bowl and it takes around 20 minutes to prepare
How to prepare:
1. Wash the salad and cube all the vegetables and the mozzarella.
2. Cook the chickpeas for around ten minutes. (If you use fresh ones you need to soak them during the night.)
3. Mix the lettuce, the vegetable and mozzarella pieces and the chickpeas and add a salad dressing.
4. Gently roast the sesame and then sprinkle it over your salad.
5. Enjoy this exquisite summer salad and have a great day :)
