Soulfood: Carrot Ginger Soup

Ingredients: 7 carrots, 2 potatoes, more or less 1 litre water, 1 tea spoon of bouillon, a piece of ginger ( approximately the size of a thumb), some oil or butter, some parsley, salt and pepper, a lemon

Amount and time of preparation: with these ingredients you can fill 4 soup plates, it takes around 50 minutes to prepare this dish How to prepare:

1. Peel the carrots and the potatoes and cut them into thin slices.

2.Cut the onion into small pieces and grate the ginger.

3. Put some oil or butter in the pan and steam the onion pieces and the grated ginger for around 5 minutes.

4. Then add the carrots and potatoes and steam them for more 2-3 minutes.

5. Now add the water with the bouillon, put the top on the pan and let the vegetables cook for around 30 minutes.

6. Once they are softboiled puree them.

7. If necessary spice it up with some salt and pepper and drizzle a little bit (half of a tea spoon) of lemon juice over the soup, sprinkle some parsley over it and.....it's mealtime! :)
