Quinoa Salad With Spinach and Figues

My friend Debbie, who I met at the Yoga Teacher Training, inspired me to come up with this quinoa salad. She makes a similar one with mango and avocado, which is super delicious and inspired me for this recipe. It's more of a late summer recipe because of the figues and the spinach but somehow I forgot to post it so I am posting it now and who knows, maybe you are currently somewhere in the world where you can get fresh figues and spinach leaves :)
Ingredients: one avocado, two figues, half of a small goat cheese, a few cherry tomatoes, fresh spinach leaves (around 200 gramm), one cup of quinoa, some salt, pepper, olive oil and balsamico vinegar
Amount and time of preparation: it takes around half an hour to prepare and you get at least two full plates
How to prepare:
1. Cube the figues, the cherry tomatoes, the avocado and the coat cheese.
2. Boil the quinoa with two cups of water and some salt or with bouillon (between 10 and 20 minutes. It depends on what kind of quinoa you use so it's best to check what it says on the package). The quinoa is ready once its soaked up all the liquid.
3. Arrange the spinach leaves on a plate and add the other ingredients.
4. Mix them and add some oil, balsamic vinegar, salt and pepper.
5. Your quinoa salad is ready. Enjoy! :)
