Soulfood: What's left in the fridge - Asia Menu

Ingredients: one red bell pepper, 8-10 mini corncobs, glass noodles, 60-80 gramms peanuts, a small spicy pepper, cilantro, peppermint, one garlic clove, one egg, 2-3 spoons of oil, some salt and pepper

Amount and time of preparation: you'll get three plates and it takes 30-40 minutes to prepare

How to prepare:

1. Cut the bell pepper into fine slices and the mini corncobs into small pieces.

2. Crush half of the peanuts with a mortar or put them in a blender.

3. Cut the garlic clove and the spicy pepper into fine slices or small pieces.

4. Pick the mint and the cilantro leaves to pieces.

5. Heat up the oil in a frying or wok pan and add the crushed peanuts and the garlic.

6. Add some salt, pepper, mint and the spicy peppers.

7. Let it fry for around 5-10 minutes. Watch out that the peanuts and the garlic don't burn! Then lower the temperature.

8. Add the red peppers and the mini corncobs. Deglace it with some hot water (around 2 decilitres)and put a top on the pan. Let it boil at a medium temperature.

9. Prepare the glassnoodles as it says on the package. Usually just cook them for a few minutes (7-10 minutes) in hot water.

10. Add the rest of the peanuts to the vegetables in the pan.

11. Decant the water from the glassnoodles and add them to the vegetables.

12. Prepare an egg as a scrambled egg and add it to the rest. Mix everything together and your Asia menu is ready! :)
