Soulfood: Pumpkin Risotto With Caramelized Walnuts

Ingredients: one cup of risotto rice, 1/8 of a pumpkin, half of an onion, salt, pepper, some oil, cheese ( I used Gruyère and Edam cheese), 7 walnuts, sugar

Amount and time of preparation: with these ingredients you can feed three people and it takes around 40 minutes to prepare

How to prepare:

1. Cut the onion and the pumpkin in small pieces.

2. Stir-fry them with a little bit of oil in a frying pan and then cover them with water.

3.Add some salt and pepper and let the vegetables boil for around 20-30 minutes until they're soft-boiled.

4. In the meantime prepare the risotto (cover the rice with 2-3 glasses of warm water and let it cook for around 15-20 minutes).

5. Then scrunch the walnuts into small pieces.

6. Once the vegetables are soft-boiled, scrunch them and add them to the risotto as soon as it's ready.

7. Then add the cheese and leave the pan on the warm cooking stove so the cheese can melt.

8. In the meantime put some sugar in a frying pan and add the walnuts, fry them for around 5-10 minutes until they are caramelized 9. Arrange the risotto on the plates and sprinkle the caramelized walnuts over it.

Dinner is served!
