Ingredients: 200-300 gramm of fresh spinach leaves, 1 red onion, 100 gramm of bacon bits, some goat cheese bits, 10-15 cherry tomatoes, some pumpkin seeds, pomegranate seeds of one pomegranate (you can either buy a package of seeds or a fresh pomegranate)
For the dressing: two spoons of oil, one spoon of balsamico vinegar, salt and pepper
Amount and time of preparation: you get two full plates and it takes around 15-20 minutes to prepare
How to prepare:
1. Wash the spinach leaves.
2. Cut the onion in slices, the tomatoes in half, and the goat cheese in small bits.
3. Fry the bacon bits until they are crispy and then roast the pumpkin seeds gently.
4. Arrange the spinach leaves on a plate and add all the other ingredients. Mix it up a little.
5. Either prepare the dressing in a seperate bowl and pour it over the salad or just pour some oil, vinegar, salt and pepper right on the salad.
6. In the end decorate the salad with the pomegranate seeds. (If you bought a whole pomegranate you need to rip it open and seed it first.)
7. Congrats- your spring salad is ready and waiting to be eaten! ;)
