Soulfood: The Vegan Mushroom Sandwich

Ingredients: one avocado, two small tomatoes, 4 slices of a red onion, half of a garlic clove, 4-5 white mushrooms, salt, pepper, red pepper, some oil (I used olive oil), 4 slices of toast or any kind of bread you like

Amount and time of preparation: with these ingredients you can make two sandwiches and it takes around 20-30 minutes

How to prepare:

1. Cut the tomatoes and mushrooms into slices

2. Cut the onion and the garlic clove into small pieces

3. Put some oil into a frying pan, heat it up and add the garlic, onion and the sliced mushrooms

4. Sauté them for around 10 minutes and add some salt, pepper, red pepper and any other kind of herbs and spices you like

5. Meanwhile mash the avocado and mix it with some onion, salt, pepper and red peppers

6. Once the mushrooms are ready add the tomatoes and sauté them for 5 minutes

7. Toast the bread (either in a toaster or a frying pan) and smear the mashed avocado cream on it

8. Then add the mushrooms and tomato slices and put another slice of toast on top

9. Put the rest of the avocado cream on top of the second toast and decorate it with one slice of tomato and mushroom

10. Enjoy your delicious vegan sandwich! :)
